Since I have been in school I have had a lot less time to be in the kitchen cooking or baking. It has been a hard thing to cut back on because in many ways being in the kitchen creating something new is my therapy and I love a house filled with the smell of something delicious to come.
Tonight I really needed a study break and it needed to be spent in the kitchen. Whatever I decided to cook or bake it had to meet these requirements: most importantly, I did not want to clean up a huge mess; it had to be easy; it had to be quick; it had to taste good; it had to be something I haven’t made before.
I love spending time online reading recipes. Awhile back, while looking for something else, I came across a recipe for Crescent Roll Dough Palmiers made with canned crescent rolls . It has been in my head to try them out so I gave them a shot. I didn’t have a can of crescent rolls but I did have a can of buttermilk canned biscuits and decided to improvise.
It only required 4 ingredients…canned biscuits (or crescent rolls), sugar, cinnamon, one lightly beaten egg white and a rolling pin. (The recipe calls for lemon zest which I didn’t have so I used cinnamon instead.)
I rolled it out on a sugar covered surface, brushed the top with the egg white then sprinkles cinnamon and sugar over the top.
I rolled both sides to the center as tightly as I could. (I imagine working with the crescent rolls would be a better for this. It will roll out thinner, roll up tighter and come out of the oven looking much more like a Palmier cookie than mine did.)
Into the oven in less than 10 minutes.
Out of the oven in 11 minutes.
Mine opened up too much in the oven and took on some interesting shapes but I still think they look good. They can be served as is or fancied up a bit. I drizzled vanilla icing over them, sprinkled on some chocolate jimmies and they’re done. I put Nutella on half of one and it was so good! Best part? There is really nothing to clean up and they are a not so sweet but delicious addition to brunch.
